Description
Ush El Bulbul, also known as “The Bird’s Nest”, is a traditional Middle Eastern dessert that combines beauty, texture, and rich flavor in one delicate bite. Crafted from fine strands of crispy golden kataifi dough, each piece is skillfully shaped into a tiny nest — a visual nod to its poetic name. At the heart of this nest lies a generous handful of roasted pistachios or mixed premium nuts, bringing a perfect contrast of crunch and nuttiness.
Once baked to a golden crisp, the nests are gently soaked in aromatic sugar syrup infused with a touch of rose water or orange blossom, adding a layer of floral sweetness that lingers with every bite. The result is a dessert that is both light and indulgent — crisp on the outside, soft and syrupy at the center, and bursting with nutty warmth.
Whether served during special gatherings, celebrations, or enjoyed as an everyday treat, Ush El Bulbul offers a taste of authentic Middle Eastern hospitality and craftsmanship.
A timeless dessert that melts hearts as much as it melts on the tongue.

Ush El Bulbul from Belad Al Sham is absolutely heavenly! The delicate crispy layers wrapped around the rich pistachio center are a perfect combination of texture and taste. It’s light, fresh, and not overly sweet — just the way authentic Middle Eastern sweets should be. I ordered it for a family gathering and everyone was asking where it came from!
